Allergen Friendly Energy Bites

Back to school season is officially here & whether you or your child has allergies or not, sometimes allergens like peanuts and tree nuts are not allowed in schools to keep everyone safe.
I am lucky to not have any allergies personally, but I work with MANY clients who have allergies and we are always looking for recipes and products that are safe! I wanted to equip you with an allergen friendly recipe for my classic Monster Energy Bites recipe from my Busy Bee Cookbook that has a peanut free twist.
Monster Energy Bites (Peanut-Free Version)
Makes ~20 bites
Ingredients:
1 cup sunflower seed butter of choice
1/2 cup honey
1 cup rolled oats (use gluten free varieties if needed)
1/4 cup chia seeds
1/2 cup mini chocolate chips (use Enjoy Life brand if you need to be Top 9 allergen free)
Directions:
Combine all ingredients into a mixing bowl & mix together well
Roll into ~ 1 inch bites and store in a glass container in the fridge
Chill for about 30 mins minimum & enjoy!
Notes: keeps in the fridge for about 1 week. Keeps in the freezer for about 1 month. You can add protein powder or collagen powder to this recipe & increase the sunflower seed butter and honey slightly to keep the batter the right consistency if you want them to be higher in protein to refuel you post workout. If you are not needing to be allergy friendly feel free to substitute peanut butter or any nut butter of choice for sunflower seed butter.
If you are being mindful of allergens be sure to use clean bowls and utensils, wash hands, and keep allergen friendly items separate from allergens to prevent cross contamination.
